Cuocere la quinoa in acqua salata secondo le istruzioni, scolarla e lasciarla raffreddare.

In una padella, cuocere gli spinaci a fuoco medio fino a farli appassire, poi strizzarli per eliminare l'acqua in eccesso.

In una ciotola, mescolare il pollo macinato, la quinoa, gli spinaci, la feta, le mandorle, l'uovo, la cipolla, l'aglio, la menta, il basilico e il prezzemolo.

Aggiungere il peperone rosso arrostito tritato, salare e pepare a piacere, amalgamando bene il tutto.

Formare una polpetta schiacciata di circa 10cm di diametro.
