Porta a ebollizione dell'acqua in una pentola, posiziona il cestello con i broccoli interi e cuoci al vapore per 8-10 minuti fino a che risultino teneri ma non sfatti. Togli dal fuoco e lascia intiepidire.

Prepara il pesto: nel mortaio o frullatore, schiaccia insieme il basilico fresco, i pinoli, lo spicchio d'aglio, 15 ml di olio e il sale fino a ottenere una pasta densa e aromatica. Aggiungi il Parmigiano grattugiato e mescola delicatamente.

Preriscalda il forno a 190°C. Disponi la pasta fillo sulla teglia per quiche (Ø 24 cm) strofinandola leggermente con il restante olio.

Taglia i broccoli cotti in cimette piccole, tenendone da parte 8 per la decorazione. Frulla il resto dei broccoli con 150 g di ricotta, gli albumi d'uovo, l'uovo intero, sale e pepe per 5-10 secondi fino a ottenere una crema con piccoli grumi.

Trasferisci la crema in una ciotola e incorpora delicatamente il pesto e i broccoli interi riservati.

Versa il composto sulla pasta fillo e distribuisci le 8 cimette di broccoli sulla superficie come decorazione.

Cuoci in forno a 190°C per 25-30 minuti fino a che la superficie risulti dorata e la crema ben assestata al centro.

Estrai dal forno, lascia riposare 5 minuti e servi tiepida, tagliata in 8 porzioni uguali.
