In una ciotola, unisci la farina integrale, l'olio d'oliva, l'acqua e un pizzico di sale, mescolando fino a ottenere un impasto omogeneo. Stendi l'impasto in una tortiera monoporzione e bucherellalo con una forchetta. Cuoci in forno preriscaldato a 200°C per 10 minuti.

In una padella, scalda un filo d'olio e soffriggi la cipolla rossa affettata per circa 3 minuti. Aggiungi il radicchio e gli spinaci, cuocendo fino a farli appassire, per circa 5-7 minuti.

In una ciotola, sbatti le uova con la ricotta light, aggiungendo sale e pepe a piacere fino a ottenere un composto cremoso.

Versa il composto di uova e ricotta sulla base di pasta già cotta e distribuisci uniformemente le verdure sopra.

Rimetti in forno a 180°C per 15 minuti, o fino a quando la superficie è dorata e il ripieno è ben cotto. Sforna, lascia intiepidire e servi.
