Asciuga il petto di tacchino con della carta assorbente e prendi un coltellino per sollevare la pelle in modo da poterla farcire con il condimento.

In una ciotola, mescola la salsa di soia, l'aceto di mele, l'aglio, la paprika, il pepe nero, il cumino, l'origano e l'olio d'oliva fino a ottenere una pasta densa.

Rimuovi circa 1/3 di questa marinata e conservala per dopo.

Spalma la marinata rimanente su tutto il tacchino, facendo attenzione a distribuirla anche sotto la pelle.

Lascia riposare il tacchino a temperatura ambiente per 30 minuti per far assorbire i sapori.

Preriscalda il forno a 160°C. Posiziona il tacchino su una griglia in una teglia da forno.

Cuoci in forno per circa 1 ora e 15 minuti, bagnando con il brodo di pollo ogni 30 minuti.
