Tritare finemente lo scalogno e unire ad aceto, vino bianco e dragoncello in un pentolino; cuocere a fuoco medio per 7 minuti fino a ridurre il liquido di 2/3. Lasciare raffreddare 10 minuti.

In una ciotola, montare il tuorlo d'uovo con un cucchiaio di acqua fredda fino a ottenere una crema pallida, quindi aggiungere gradualmente lo yogurt greco freddo, il sale e il pepe; versare il ridotto di aceto filtrato incorporando delicatamente con frusta.
