Tritare finemente i peperoni rossi e passarli attraverso un colino per estrarre il succo e ridurre l'umidità: questo riduce il carico calorico mantenendo il sapore.

In una ciotola a bagnomaria (non in contatto diretto con l'acqua calda a 70°C), montare i tuorli con un frustino per 2-3 minuti fino a ottenere una mousse leggera e pallida.
