Method

In una padella antiaderente, scaldare un cucchiaio di olio di semi e aggiungere una cipolla tritata, facendola rosolare per un minuto.

Unire uno spicchio d'aglio schiacciato, un cucchiaino di curry, un pezzetto di zenzero grattugiato, un pizzico di cumino e coriandolo. Cuocere per 2 minuti fino a quando non sprigionano i loro aromi.

Aggiungere 100 g di cavolfiore tagliato a pezzetti e 80 g di tofu sbriciolato, rosolando per 3 minuti.

Versare 50 ml di brodo vegetale e cuocere a fuoco medio-basso per circa 8 minuti, finché il liquido non si riduce. Aggiustare di sale e pepe.

Per l'impasto, mescolare 50 g di farina di mandorle con 20 g di proteine in polvere e un pizzico di sale.

Incorporare un cucchiaio di olio di semi e 30 ml di acqua tiepida, impastando fino ad ottenere un composto omogeneo.

Stendere l'impasto su un piano infarinato, creando due dischi sottili.

Riempire ogni disco con 2-3 cucchiai del ripieno di cavolfiore, piegare a cono e sigillare i bordi con un po' d'acqua.

Disporre le samosa su una teglia rivestita di carta forno, spennellare con un velo di olio di semi e cuocere in forno a 180°C per 15 minuti, fino a doratura.
