Trita finemente l'aglio e il prezzemolo. Mescola in una ciotola la ricotta scremata, il pangrattato integrale, il pecorino grattugiato, l'aglio e il prezzemolo tritati, l'uvetta e i pinoli. Regola di sale e pepe nero.

Lava le sarde sotto acqua fredda, asciugale con carta assorbente. Con un coltello da pesce, incidi delicatamente il ventre di ogni sarda ed elimina le interiora, risciacquando bene. Lascia la spina dorsale intatta.

Posiziona 16 sarde sulla pelle con l'interno verso l'alto. Distribuisci circa 1 cucchiaino di ripieno su ciascuna, poi copri con le altre 16 sarde, pelle verso l'alto, sigillando delicatamente.

Versa il brodo vegetale in una teglia antiaderente, ungila leggermente con 1 cucchiaio di olio extravergine. Disponi le sarde farcite in un'unica fila, spennellale con i restanti 2 cucchiai di olio.

Cuoci in forno statico preriscaldato a 200°C per 18 minuti fino a che la pelle risulta croccante e il ripieno ben caldo. Servi subito.
