Method

Scalda 150 ml di latte scremato in un pentolino a fuoco medio per 2 minuti, quindi aggiungi 40 g di farina integrale mescolando con una frusta fino a eliminare i grumi. Lascia raffreddare per 30 minuti in una ciotola.

Trasferisci il composto raffreddato in una ciotola grande e aggiungi la restante parte di latte scremato, il lievito sbriciolato, la farina integrale mescolata con le proteine in polvere vanilla, l'olio e il sale.

Impasta energicamente con le mani per 8-10 minuti fino a ottenere un impasto liscio ed elastico. Copri con un canovaccio umido e lascia lievitare per 1 ora a temperatura ambiente fino al raddoppio.

Trasferisci l'impasto su un piano di lavoro leggermente infarinato, dividi in 16 pezzi di circa 45 g ciascuno e forma palline ben compatte. Disponile su una teglia rivestita di carta forno, copri e lascia lievitare 25 minuti.

Preriscalda il forno a 200°C. Inforna i panini per 12-14 minuti fino a doratura leggera. Trasferisci su una gratella per raffreddare.

Sciogli il cioccolato fondente a bagnomaria o a microonde (30 secondi, mescolando). Con uno stuzzicadenti, disegna una linea verticale su ogni panino per simulare una frattura cranica, poi traccia piccole linee verticali e disegna gli occhi.

Riponi i panini in frigorifero per 15 minuti per far indurire il cioccolato. Con una tasca da pasticceria, aggiungi un piccolo filetto di marmellata al centro come dettaglio finale.
