In una ciotola ampia, setaccia insieme la farina di grano saraceno, la farina di farro integrale e il bicarbonato di sodio.

Aggiungi gradualmente l'acqua frizzante, mescolando con una frusta per ottenere una pastella liscia e senza grumi, simile a quella delle crepes.

Copri la ciotola con pellicola trasparente e lascia riposare in frigorifero per 30 minuti: il riposo aiuta a idratare bene le fibre del grano saraceno.

Nel frattempo, taglia il Quark o la ricotta magra in cubetti di circa 2 cm di lato.

Delicatamente, incorpora i cubetti di formaggio nella pastella, mescolando dal basso verso l'alto per non romperli.

Riscalda l'olio extravergine di oliva in una padella dal fondo spesso a 170 °C (usa un termometro da cucina per precisione).

Con un cucchiaio, preleva porzioni di pastella contenenti un cubetto di formaggio e immergile delicatamente nell'olio caldo: cuoceranno in circa 2-3 minuti per lato.
