Passate le amarene fresche con una forchetta in una ciotola, conservandone 8-10 per la decorazione.

In un'altra ciotola, versate la ricotta greca e montate leggermente con una frusta per renderla più ariosa, circa 1-2 minuti.

Aggiungete il miele, l'essenza di vaniglia e il succo di limone alla ricotta, mescolando delicatamente fino a ottenere una crema omogenea e fluida.
