Method

In una ciotola capiente, mescola il latte di mandorla tiepido con l'olio di cocco fuso e l'uovo. Aggiungi il lievito e lascia riposare per 5 minuti.

In un'altra ciotola, setaccia la farina integrale, l'eritritolo, il cardamomo e il sale.

Unisci gli ingredienti secchi a quelli umidi e mescola fino a ottenere un impasto morbido. Copri con un panno e lascia lievitare in un luogo caldo per 30 minuti.

Preriscalda il forno a 180°C.

Trasferisci l'impasto su un piano infarinato e forma 8 palline. Posizionale su una teglia rivestita di carta forno e lascia lievitare per altri 20 minuti.

Cuoci in forno per 12-15 minuti finché non sono dorate. Lascia raffreddare.

Una volta raffreddati, taglia la parte superiore di ogni bun e svuotali leggermente.

Mescola lo yogurt greco con la frutta fresca tagliata a pezzetti e riempi ogni bun con il composto.
