Pulire la seppia rimuovendo tentacoli, sacca del nero e occhio, lavare accuratamente.

Cuocere la quinoa in acqua salata secondo le istruzioni sulla confezione.

Tritare i tentacoli della seppia con aglio, prezzemolo, mandorle, yogurt greco, acciuga, sale, pepe e peperoncino; unire alla quinoa cotta.

Riempire la sacca della seppia con il composto di quinoa e chiudere con uno stuzzicadenti.

In una padella, rosolare la cipolla rossa con 3g di olio a fuoco medio per 3 minuti, aggiungere il cavolfiore ridotto a piccoli pezzi e cuocere per 5 minuti.

Trasferire la seppia ripiena nella padella, aggiungere basilico fresco e cuocere coperto a fuoco lento per 15-20 minuti.
