Method

Asciuga la carne di manzo con carta assorbente, tagliala a cubetti di circa 3 cm e condiscila con amido di mais, sale e pepe.

Scalda l'olio d'oliva in una padella antiaderente a fuoco medio-alto e rosola la carne in due tempi, finché non sarà dorata su tutti i lati.

Trasferisci la carne in una pentola a cottura lenta.

Nella stessa padella, abbassa il fuoco a medio e aggiungi la pasta di curry, mescolando per un paio di minuti.

Versa il brodo di manzo e il latte di cocco, mescolando fino a ottenere un composto omogeneo.

Aggiungi le patate dolci e le carote. Copri e cuoci a fuoco alto per 4 ore o a fuoco basso per 6 ore, finché la carne non è tenera.
