In una padella antiaderente, scalda l'olio d'oliva a fuoco medio. Aggiungi l'aglio tritato e il cipollotto, e soffriggi fino a che non diventano traslucidi.

Aggiungi il cavolo rapa grattugiato e cuoci per circa 3 minuti, mescolando di tanto in tanto.

Unisci le zucchine e continua a cuocere per altri 5 minuti, fino a che saranno tenere.

Aggiungi gli spinaci, la paprika, il sale e il pepe, e cuoci fino a che gli spinaci appassiscono. Togli dal fuoco e lascia raffreddare.

Preriscalda il forno a 200°C e rivesti una teglia con carta da forno.

Stendi la pasta sfoglia integrale e ritaglia dei cerchi di circa 10 cm di diametro.

Posiziona un cucchiaio di ripieno al centro di ciascun cerchio.

Spennella i bordi con un po' d'acqua, piega la pasta a metà e sigilla i bordi premendo con una forchetta.

Pratica dei fori sulla superficie di ogni empanada e spennella con l'uovo sbattuto.

Inforna per 15-20 minuti, finché non sono dorate e croccanti. Servi calde.
