Preriscaldare il forno a 180°C e preparare 8 stampini di silicone per dolcetti monoporzione.

Versare l'acqua calda sui datteri e lasciar riposare 10 minuti fino ad ammorbidirsi completamente.

Frullare i datteri ammollati fino a ottenere una crema omogenea, quindi trasferire in una ciotola.

In una seconda ciotola, mescolare farina d'avena, farina di mandorle, cacao, bicarbonato e vaniglia.

In una terza ciotola, sbattere insieme burro, sciroppo d'acero e miele fino a cremosità.

Incorporare le uova uno alla volta alla crema burro, mescolando bene.

Alternare l'aggiunta di ingredienti secchi e crema di datteri al composto burro, mescolando delicatamente fino a omogeneità.

Ripartire l'impasto negli stampini e infornare per 22-25 minuti fino a quando lo stuzzicadenti esce con pochissime briciole.

Nel frattempo, preparare la salsa toffee: scaldare burro, sciroppo e sale in un pentolino a fuoco medio, aggiungere latte di cocco e vaniglia, cuocere 2-3 minuti fino a leggera densità.
