Lava le fragole, rimuovi i piccioli e tagliale a pezzetti. Metti 100 g di fragole in una ciotola e schiacciale con una forchetta, tenendo da parte le restanti per la guarnizione.

In un pentolino, unisci l'eritritolo, l'amido di mais e un pizzico di sale. Aggiungi il latte di mandorla e scalda a fuoco medio, mescolando, fino a quando non inizia ad addensarsi.

Riduci il fuoco e continua a cuocere per 2 minuti, mescolando.

In una ciotola separata, sbatti il tuorlo d'uovo e aggiungi un po' della miscela di latte calda per temperare l'uovo.
