Method

Risciacquate 70 g di riso per sushi sotto acqua fredda per 5 minuti, scolatelo bene. Portate a ebollizione 140 ml di acqua in un pentolino, versate il riso, coprite e cuocete a fuoco basso per 12 minuti fino all'assorbimento completo.

In una ciotola piccola riscaldate 30 ml di aceto di riso con 1 cucchiaino di zucchero e 1 pizzico di sale, mescolate fino a scioglimento. Versatelo sul riso caldo, mescolate delicatamente con una spatola mentre lo fate raffreddare ventilando.

Tagliate il filetto di salmone (80 g) in lamelle di 4×4 cm per 5 mm di spessore, la trota affumicata (40 g) in strisce, il tonno (50 g) in lamelle sottili. Sbucciate e affettate l'avocado (60 g) in fette regolari.

Disponete metà del riso freddo sul fondo di un piccolo coppapasta (o direttamente in piatto), compattate leggermente. Distribuite le fette di avocado, salate e pepate, aggiungete le strisce di trota affumicata.

Ricoprite con il riso restante, compattate e capovolgete il tutto su un piatto di presentazione. Decorate il top con le lamelle di salmone e tonno, una piccola cucchiaiata di wasabi fresco, 10 g di uova di salmone, germogli di riso (se disponibili) e 1 pizzico di semi di sesamo tostato.

Servite subito accompagnando con 15 ml di salsa di soia light e una fetta di limone verde.
