Risciacquate il riso sushi sotto acqua fredda fino a quando l'acqua risulta trasparente, lasciate scolare 30 minuti. Versate in pentola con 150 ml d'acqua, portate a ebollizione per 2 minuti mescolando, abbassate il fuoco e fate cuocere coperto 12 minuti, poi riposate fuori dal fuoco coperto 10 minuti.

Nel frattempo riscaldate a microonde per 20 secondi: 15 ml di aceto di riso, 5 g di zucchero di canna, 1 pizzico di sale fino a dissoluzione completa. Versatelo sul riso caldo e fate intiepidire a temperatura ambiente.

Tagliate il salmone (80 g) e i gamberetti (70 g) a dadini fini, condite con 5 ml di olio di sesamo, 5 g di semi di sesamo nero tostati, sale e pepe.

Mescolate 20 g di yogurt greco con 3 g di wasabi e 5 g di erba cipollina fresca.

Affettate l'avocado (80 g) in lamine sottili.

In un cerchio di presentazione (o direttamente nel piatto), distribuite metà del riso compatto, coprite con metà della salsa wasabi-yogurt, depositate metà delle lamine d'avocado e metà del tartare di pesce. Ripetete gli strati con gli ingredienti rimasti. Servite freddo subito.
