Pulire le patate sotto l'acqua fredda e tagliarle a pezzi da 3-4 cm. Lavare i fagiolini e spuntarli alle due estremità.

Portare il brodo vegetale a ebollizione in una pentola media. Aggiungere le patate e cuocere a fuoco medio per 20 minuti, finché non diventano tenere al centro ma non disfatte.

Negli ultimi 5 minuti di cottura delle patate, aggiungere i fagiolini e continuare la cottura insieme.

Nel frattempo, scaldare l'olio in un'ampia padella antiaderente a fuoco medio. Tritare finemente la cipolla e l'aglio, aggiungerli all'olio e rosolare per 3-4 minuti fino a diventare trasparenti e profumati, senza farli dorare.

Scolare patate e fagiolini con una schiumarola, mantenendo da parte 100ml di brodo vegetale di cottura.

Aggiungere patate e fagiolini rosolati alla padella con cipolla e aglio. Mescolare delicatamente.

In una ciotola, stemperare la ricotta magra con 100ml di brodo freddo fino a ottenere una crema liscia. Versarla sulla padella.

Amalgamare con un mestolo di legno a fuoco basso per 2-3 minuti, incorporate delicatamente il grana padano grattugiato.

Trasferire in una zuppiera calda, controllare di sapore con sale e pepe nero macinato al momento. Servire subito.
