Method

Tritare finemente le nocciole tostate in un mixer: otterrai una consistenza granulosa.

In una ciotola, mescolare farina integrale, 40 g di nocciole tritate, sale e bicarbonato.

Sciogliere l'olio di cocco a bagnomaria e unirlo al composto secco, amalgamando bene.

Aggiungere l'uovo e impastare fino a ottenere un composto omogeneo e compatto.

Avvolgere l'impasto nella pellicola trasparente e riposare in frigorifero per 20 minuti.

Scaldare la panna a 50°C (quasi calda al tatto) e versarla sul cioccolato; attendere 1 minuto, quindi mescolare fino a ottenere una crema liscia e brillante.

Sciogliere la gelatina in acqua fredda per 5 minuti, poi scaldare leggermente fino a liquidarla.

Montare gli albumi a neve ferma insieme al miele; aggiungere delicatamente la proteina in polvere e la gelatina sciolta, mescolando con un cucchiaio di legno dall'alto verso il basso per mantenere la consistenza.

Trasferire la meringa proteica in una tasca da pasticceria e decorare il top di ogni tartelletta.

Completare con le nocciole tritate rimanenti.
