Method

In una padella antiaderente, scalda l'olio d'oliva e fai rosolare la cipolla tritata fino a doratura. Aggiungi il pollo macinato e cuoci fino a quando non è completamente cotto. Aggiungi zucchine e carote grattugiate e continua a cuocere per 5 minuti. Condisci con sale, pepe, paprika ed erbe aromatiche. Mescola bene e lascia raffreddare.

In una ciotola, sciogli il lievito nell'acqua tiepida e lascia riposare per 10 minuti.

In un'altra ciotola, mescola la farina integrale con un pizzico di sale. Aggiungi il lievito sciolto e l'uovo, quindi impasta fino a ottenere un composto omogeneo. Se necessario, aggiungi un po' di farina.

Copri l'impasto con un panno e lascia lievitare in un luogo caldo per 30 minuti.

Una volta lievitato, riprendi l'impasto e dividilo in palline della dimensione di un mandarino. Stendi ogni pallina in un disco.

Metti un cucchiaio abbondante di ripieno al centro di ogni disco e ripiega i bordi per chiudere bene il piroshki.

Cuoci in forno preriscaldato a 180°C per 20-25 minuti, fino a ottenere una doratura leggera.

Servi i piroshki caldi, accompagnati da una salsa yogurt leggera.
