Inizia cuocendo il petto di pollo in una padella antiaderente, senza olio, a fuoco medio per circa 10 minuti, fino a cottura completa. Taglia a strisce sottili e metti da parte.

Taglia le carote e il cetriolo a julienne. In una ciotola, unisci i germogli di soia, le carote, il cetriolo, la menta e il coriandolo. Aggiungi la salsa di soia e il succo di limone, mescolando bene il tutto.

Prepara una ciotola con acqua tiepida. Immergi un foglio di riso per circa 10-15 secondi fino a renderlo morbido. Scolalo e posizionalo su un piano di lavoro.

Al centro del foglio di riso, disponi alcune strisce di pollo e un po' di ripieno di verdure. Piegare i lati e arrotolare il foglio per sigillare il ripieno. Ripeti fino a esaurire gli ingredienti.
