Preriscalda il forno a 180°C. In una ciotola, sbatti l'uovo con l'eritritolo fino ad ottenere un composto spumoso.

Aggiungi la farina di mandorle e il lievito, quindi unisci il latte di mandorla, mescolando bene fino a ottenere un impasto omogeneo.

Versa il composto in una tortiera monoporzione (diametro 10 cm) e cuoci in forno per circa 20 minuti.

Nel frattempo, prepara la crema: in una ciotola, ammolla la gelatina in acqua fredda, poi scioglila in poca acqua calda.

Monta lo yogurt greco e incorpora la gelatina sciolta, il succo e la scorza di limone mescolando delicatamente.

Quando il pan di spagna è raffreddato, spalma sopra la crema di yogurt e chiudi con un altro strato di pan di spagna.

Metti in frigorifero per almeno 60 minuti prima di servire, decorando con scorza di limone.
