Preriscalda il forno a 180°C. In una ciotola, mescola le carote grattugiate con la farina di mandorle, l'uovo, l'eritritolo, l'olio di cocco fuso, il sale e il lievito fino a ottenere un composto omogeneo.

Versa l'impasto in una piccola teglia rivestita di carta forno e cuoci per circa 15 minuti, fino a che non risulta dorato.

Nel frattempo, prepara la crema mescolando lo yogurt greco con il queso fresco e un cucchiaino di eritritolo.
