Preriscaldare il forno a 180°C. Rivestire una teglia rotonda da 23 cm con carta da forno.

In una ciotola, montare gli albumi a neve ferma. In un'altra ciotola, unire la farina di mandorle, le proteine in polvere, il lievito e il sale.

In una grande ciotola, mescolare lo yogurt greco, il dolcificante, il latte di mandorla e l'estratto di vaniglia fino a ottenere un composto omogeneo.

Aggiungere gli ingredienti secchi al composto umido, mescolando delicatamente. Infine, incorporare gli albumi montati in tre aggiunte, mescolando dal basso verso l'alto.

Versare l'impasto nella teglia preparata e livellare la superficie. Cuocere in forno per 20-25 minuti fino a doratura. Lasciare raffreddare.
