Preriscaldare il forno a 180°C. Grattuggiare le mandorle e mescolarle con l'uovo, il parmigiano, il sale e mezzo cucchiaio d'olio fino a ottenere un impasto compatto.

Stendere l'impasto tra due fogli di carta forno in un disco di 18 cm e trasferirlo in una piccola teglia rettangolare.
