Preriscaldare il forno a 175°C e foderare uno stampo rotondo (diametro 22 cm) con carta forno.

Lavare le zucchine e grattugiarle con la buccia; adagiare in un colino e salare leggermente per 5 minuti, poi strizzare bene per eliminare l'umidità in eccesso.

In una ciotola, montare le uova con stevia liquida per 3-4 minuti fino a ottenere un composto chiaro e spumoso.

Aggiungere delicatamente lo yogurt greco e l'estratto di vaniglia, mescolando con un cucchiaio di legno.

In un'altra ciotola, mescolare la mandorla in polvere, la proteine in polvere, il lievito chimico e il sale.
