Preriscaldare il forno a 180°C e preparare 8 stampi per tortine (Ø 10 cm) con carta da forno.

In una ciotola unire farina di mandorle, proteine in polvere, lievito e sale; mescolare bene.

In un'altra ciotola montare le uova intere con il miele fino a ottenere un composto chiaro e spumoso.

Aggiungere lo yogurt greco, l'olio di cocco e 40 ml di succo di limone alle uova; mescolare delicatamente.

Incorporare la miscela secca nella miscela umida, quindi aggiungere la scorza di 1 limone e gli aghi di rosmarino tritati finemente.

Dividere l'impasto tra gli stampi e livellare la superficie.
