Preriscaldare il forno a 180°C. Stendere i tre fogli di pasta fillo su un piano di lavoro e spruzzarli leggermente con olio di cocco spray.

Posizionare i fogli di fillo in 6 stampini da crostatina (circa 7 cm di diametro), pressandoli delicatamente sul fondo e sui bordi; il fillo creerà una base croccante naturale.

Infornare gli stampini per 8-10 minuti fino a doratura leggera, quindi estrarre e far raffreddare.

Nel frattempo, passare la ricotta al setaccio in una ciotola per renderla liscia e priva di grumi.

Aggiungere gli albumi uno alla volta, mescolando delicatamente con una frusta; la crema deve restare soffice.

Incorporare il latte scremato, lo zucchero di canna, il cacao amaro, la cannella e l'estratto di vaniglia; mescolare fino a ottenere una crema omogenea e vellutata.

Versare la crema proteica negli stampini già raffreddati, distribuendola equamente.
