Preriscaldare il forno a 200°C e rivestire una placca con carta forno.

Tostare leggermente le nocciole in padella antiaderente a fuoco medio per 3-4 minuti, mescolando spesso; trasferire in un piatto e far raffreddare.

Tritare finemente le nocciole tostate con uno spremiagrumi o robot da cucina fino a ottenere una consistenza granulosa.

In una ciotola, mescolare le nocciole tritate con le proteine in polvere, lo zucchero di canna, i semi di canapa, la cannela e il sale.

Aggiungere lo sciroppo d'acero al composto e mescolare bene fino a ottenere una crema omogenea e malleabile.

Stendere leggermente i due fogli di pasta sfoglia sul piano di lavoro con un mattarello.

Distribuire il ripieno di nocciole su un foglio, lasciando 1 cm di margine sui bordi.

Coprire con il secondo foglio di pasta, pressando delicatamente ai bordi.

Con un coltello affilato o una rotella, tagliare strisce verticali di 2,5 cm circa di larghezza.

Tagliare le strisce a metà, ottenendo rettangoli di circa 8 cm.

Attorcigliare ogni rettangolo su se stesso, creando una spirale, e posizionare sulla placca preparata.

Cuocere per 15-18 minuti a 200°C fino a doratura uniforme.
