In una ciotola, unisci lo yogurt greco, l'aglio grattugiato, il sale, il pepe nero e l'aneto. Mescola bene e lascia riposare a temperatura ambiente per alcuni minuti.

In una padella, scalda l'olio d'oliva a fuoco medio. Aggiungi la paprika affumicata e, se desideri, il peperoncino in fiocchi. Mescola per far insaporire e spegni il fuoco.

In una pentola, porta a ebollizione 2-3 cm d'acqua e aggiungi l'aceto. Riduci la fiamma e, mantenendo un leggero sobbollire, rompi un uovo in una ciotola e fallo scivolare delicatamente nell'acqua. Ripeti con le altre uova, cuocendole per circa 3-4 minuti fino a quando gli albumi sono solidi ma i tuorli sono ancora morbidi.

Rimuovi le uova con una schiumarola e lasciale asciugare su un panno.

Distribuisci il composto di yogurt su due piatti, creando delle piccole depressioni con il dorso di un cucchiaio.

Adagia sopra le uova poché e versa l'olio aromatizzato con paprika. Servi subito, guarnendo con un pizzico di sale.
