Pela le carote e tagliale a strisce sottili per il lungo, quindi riduci le strisce in pezzi di circa 5 cm.

In una pentola capiente, porta a ebollizione l'acqua con lo zucchero di cocco, la paprika affumicata, il sale e l'aglio in polvere.

Aggiungi le carote e riduci la fiamma, lasciando sobbollire per circa 20-25 minuti, finché non sono tenere. Scola e conserva 200 ml di liquido di cottura.

Metti le carote in un contenitore, aggiungi il liquido di cottura, la salsa di soia e l'aceto di mele. Mescola bene e lascia marinare in frigorifero per almeno 2 ore.
