Method

Cospargi le fette di melanzana con un pizzico di sale e lasciale riposare per 20 minuti. Sciacquale e asciugale con carta assorbente.

Preriscalda il forno a 190°C.

In una pentola antiaderente, scalda un cucchiaio di olio e cuoci le melanzane e le zucchine fino a doratura, circa 3 minuti per lato. Rimuovi e metti da parte.

Nella stessa pentola, cuoci le patate per 5 minuti per lato fino a doratura. Rimuovi e metti da parte.

Nella pentola, aggiungi un altro cucchiaio di olio, cipolla e aglio. Cuoci fino a doratura, circa 5 minuti.

Aggiungi l'aceto e fai evaporare. Unisci i pomodori, le lenticchie, il prezzemolo e l'origano. Condisci con sale e pepe e cuoci a fuoco lento per 10 minuti.

In una pirofila, disponi uno strato di melanzane, zucchine, patate e metà del composto di lenticchie. Ripeti gli strati terminando con le verdure.

Per la salsa, scalda il latte con burro e farina fino a ottenere una consistenza cremosa. Aggiungi noce moscata e l'uovo sbattuto.

Versa la salsa sulle verdure e spolvera con il parmigiano.
