Method

Preriscaldare il forno a 200°C e foderare una teglia rettangolare con carta forno.

Pulire le carote e tritarle finemente; ripetere con i porri, tenendoli separati.

In una padella antiaderente con 5 g di olio, rosolare i porri a fuoco medio per 3 minuti fino a ammorbidirsi, poi trasferire in una ciotola.

Aggiungere altri 5 g di olio nella padella, cuocere le carote per 4 minuti, poi unite gli spinaci precedentemente risciacquati. Rosolare per 2 minuti fino ad appassire; trasferire in un'altra ciotola e lasciar intiepidire.

In una terza ciotola, frullare con una forchetta la ricotta magra con le uova, il Parmigiano, il latte scremato, sale e pepe fino a ottenere una crema omogenea.

Dividere la crema di ricotta in due parti: nella prima aggiungere il misto carote-porri, nella seconda gli spinaci, amalgamando delicatamente.

Stendere il foglio di pasta sfoglia sulla teglia fodera; distribuire uno strato della crema alle carote, cospargere i pomodorini tagliati a metà, quindi aggiungere lo strato di crema agli spinaci.

Tagliare la rimanente pasta sfoglia in una forma leggermente più grande della teglia e posizionarla come copertura; sigillare i bordi delicatamente con le dita inumidite.

Spennellare la superficie con il tuorlo diluito in 1 cucchiaio di latte scremato.

Infornare a 200°C per 28-30 minuti fino a doratura uniforme. Lasciar riposare 5 minuti, affettare e servire.
