Method

Riscalda il latte intero in un pentolino a fuoco medio fino a raggiungere 45°C (controlla con un termometro da cucina), poi spegni e lascia intiepidire a 40°C.

In una ciotola, diluisci lo yogurt naturale con 100 ml del latte tiepido, mescolando delicatamente finché non si forma un composto omogeneo senza grumi.

Aggiungi il latte in polvere scremato al composto di yogurt e mescola bene per incorporarlo completamente.

Versa il resto del latte tiepido nella ciotola e mescola con movimenti dolci fino a ottenere una miscela uniforme.

Distribuisci il composto in 8 vasetti di vetro da 120 g ciascuno e chiudili con i coperchi.

Avvolgi i vasetti in uno spesso asciugamano pulito e riponi il pacco in una borsa termica o in una yogurtiera (se disponibile) mantenendo la temperatura intorno ai 40-42°C per 10-12 ore.

Verifica la consistenza dopo 10 ore: deve risultare cremoso e leggermente acido. Se desideri una texture più densa, lascia fermentare 2-3 ore in più.

Estrai i vasetti e riponi in frigorifero almeno 2 ore prima di servire. Conserva fino a 7 giorni in frigorifero.

Poco prima di consumare, aggiungi il miele acacia (circa 1 cucchiaino per vasetto) e se desideri, granola, frutta fresca o noci.
