Method

Preparare gli ingredienti: pelare e tritare finemente la cipolla, affettare l'aglio, tagliare i pomodori a dadini piccoli, sciacquare bene le cozze.

In una pentola grande, scaldare l'olio e aggiungere cipolla e aglio, rosolare per 2-3 minuti fino a profumazione.

Aggiungere i pomodori dadini, il concentrato di pomodoro, l'alloro e il prezzemolo; fare insaporire per 2 minuti.

Versare il brodo di pesce e l'acqua, portare a ebollizione.

Aggiungere le cozze, coprire e cuocere per 5-6 minuti a fuoco medio-alto finché non si aprono (scartare quelle che rimangono chiuse).

Posizionare i filetti di merluzzo e i gamberi sopra le cozze, abbassare il fuoco e cuocere a fuoco medio per altri 8-10 minuti finché il pesce non diventa opaco.

Sgusciare tre quarti delle cozze e riportare il frutto nella pentola.

Aggiustare di sale e pepe, versare lo zafferano sciolto in un cucchiaio di brodo caldo.
