Method

Scaldare l'olio in una pentola grande e rosolare la cipolla finemente tritata e l'aglio schiacciato per 2-3 minuti, finché non diventano traslucidi e fragranti.

Aggiungere la carota tagliata a dadini e il sedano tritato, rosolare per altri 3 minuti mescolando occasionalmente.

Versare il brodo vegetale caldo e portare a ebollizione, quindi aggiungere le lenticchie rosse, il sale, il pepe e le foglie di alloro.

Ridurre il fuoco a medio-basso e cuocere a fuoco lento per circa 20-22 minuti, finché le lenticchie non iniziano a ammorbidirsi ma mantengono la loro forma.

Aggiungere gli spinaci baby e cuocere per altri 8-10 minuti, mescolando delicatamente fino a quando gli spinaci non risultano completamente teneri.

Assaggiare e correggere di sale e pepe secondo il gusto.
