In una padella antiaderente, tosta a fuoco basso i semi di coriandolo, cumino, cardamomo, pepe nero e chiodi di garofano per circa 2 minuti, fino a quando non sprigionano il loro aroma.

Trasferisci le spezie tostate in una ciotola, aggiungi l'olio extravergine d'oliva e mescola fino a ottenere una pasta omogenea.

Condisci le ali di pollo con sale e strofina generosamente la pasta di spezie su tutta la superficie. Copri e lascia riposare in frigorifero per 30 minuti.
