Method

Scalda l'olio d'oliva in una padella antiaderente a fuoco medio-alto e aggiungi il cavolfiore. Rosola per circa 3 minuti, poi trasferiscilo in un piatto.

Nella stessa padella, aggiungi i dadini di patata dolce e cuoci per 4 minuti.

Aggiungi la cipolla, lo zenzero e l'aglio. Cuoci per 3 minuti fino a quando la cipolla diventa trasparente.

Unisci il pomodoro tritato e un pizzico di sale, cuoci per altri 2 minuti.

Aggiungi il cumino, il garam masala, la curcuma e il coriandolo, mescola bene e aggiungi circa 30ml di acqua per mantenere umido il tutto.

Reinserisci il cavolfiore e le patate dolci, poi aggiungi il tofu sbriciolato. Mescola bene per amalgamare gli ingredienti.

Copri e cuoci a fuoco basso per 5 minuti.

A fine cottura, aggiungi il succo di limone e mescola bene prima di servire.
