Method

In una pentola, unisci le mele a cubetti, l'uvetta, la cipolla rossa tritata e lo zenzero. Aggiungi l'acqua e porta a ebollizione a fuoco medio-alto, mescolando di tanto in tanto.

Una volta che il composto inizia a bollire, riduci il fuoco a basso, copri e lascia cuocere per circa 30 minuti, mescolando frequentemente finché le mele non diventano tenere.

Aggiungi l'eritritolo, l'aceto di mele, la cannella, il cardamomo, il pepe nero e la noce moscata. Mescola bene e continua a cuocere scoperto per altri 15 minuti, fino a quando il composto si addensa leggermente.

Rimuovi dal fuoco e lascia raffreddare. Una volta freddo, trasferisci il chutney in un barattolo sterilizzato e conservalo in frigorifero fino al momento di servire. Può essere utilizzato entro una settimana.
