In una padella asciutta, tosta i chiles chipotle, guajillo e ancho a fuoco medio, mescolando costantemente per 3 minuti fino a quando non sono aromatici. Trasferiscili in un frullatore.

Riscalda il brodo di pollo in una pentola fino a farlo sobbollire, circa 5 minuti. Versa il brodo nel frullatore.

In una padella asciutta, tosta le fette di pane integrale e le strisce di tortilla a fuoco medio fino a doratura, circa 3 minuti. Aggiungili al frullatore con il brodo e i chiles.

Lascia in ammollo il composto fino a quando il pane e le tortillas non sono ammorbiditi, circa 10 minuti, poi frulla fino a ottenere una crema liscia.

Cuoci i pomodori e i tomatillos in una padella a fuoco medio-alto fino a quando non sono morbidi e leggermente bruciacchiati, circa 4 minuti per lato. Aggiungi i pomodori al frullatore con la crema di chiles.

In una grande padella, scalda l'olio d'oliva e fai soffriggere cipolla, aglio, arachidi, uvetta, cumino, origano, pepe e cannella, mescolando fino a quando la cipolla è dorata, circa 5-8 minuti.

Versa la purea di chiles in una pentola grande a fuoco medio. Aggiungi 300 ml di brodo di pollo, il cioccolato fondente e un pizzico di sale. Porta a ebollizione e fai cuocere fino a quando la salsa non si addensa, circa 10-15 minuti.
