Toasta leggermente le nocciole in una padella antiaderente per 2-3 minuti, quindi tritale grossolanamente mantenendo una granulometria irregolare.

Sciogli delicatamente i fogli di gelatina in 3 cucchiai di acqua tiepida e lascia riposare 5 minuti.

Riscalda i tuorli con lo zucchero di canna a bagnomaria (temperatura circa 65-70°C) mescolando continuamente per 7-8 minuti fino a ottenere un composto pallido e denso; togli dal calore.

Aggiungi la gelatina sciolta ai tuorli ancora caldi mescolando con una frusta, poi lascia intiepidire.

Passa la ricotta fresca al setaccio per renderla più leggera, quindi incorporala delicatamente al composto di tuorli con movimenti dal basso verso l'alto usando una spatola.

Aggiungi la polvere proteica, la vaniglia, il succo di limone e il sale mescolando fino a ottenere una crema omogenea.

Incorpora le nocciole tostate e tritate con movimenti dolci.

Versa il composto in uno stampo da 1 litro rivestito di carta da forno oppure in 6 stampini monoporzione (7-8 cm di diametro).

Copri con pellicola trasparente e riponi in frigorifero per 5-6 ore o fino al giorno seguente.
