Preriscaldare il forno a 180°C e foderare una placca con carta da forno.

Tritare finemente le nocciole e le mandorle tostate insieme fino a ottenere una granella uniforme; trasferire in una ciotola.

Aggiungere la proteine in polvere, lo zucchero di cocco e il sale, mescolando bene.

In un'altra ciotola, sbattere l'uovo con il latte scremato e l'estratto di vaniglia fino a renderli omogenei.

Versare il composto liquido nella ciotola secca, aggiungere la farina di mandorle, la farina integrale e il lievito.
