Preriscaldare il forno a 140°C e rivestire una teglia con carta da forno.

Tritare finemente le mandorle intere fino a ottenere una granella grossolana, quindi tostarle in forno per 10 minuti a 140°C. Lasciar raffreddare completamente.

Montare gli albumi a neve ferma con una frusta elettrica (circa 3-4 minuti) fino a ottenere punte salde.

Disporre i biscotti sulla teglia preparata, coprire con un telo umido e refrigerare per 2 ore.

Preriscaldare il forno a 160°C e cuocere i biscotti per 18 minuti fino a doratura leggera.
