In una ciotola grande, mescola la farina di farro, le proteine in polvere, il lievito, la cannella, lo zenzero grattugiato e il sale fino a ottenere un mix omogeneo.

In un'altra ciotola, combina il miele, l'olio di cocco fuso e la bevanda di mandorla, mescolando bene fino a emulsionare.

Versale il composto liquido nel mix secco e incorpora le nocciole tritate. Amalgama con una spatola fino a ottenere un impasto compatto e coeso.

Avvolgi l'impasto nella pellicola trasparente e riporalo in frigorifero per 20 minuti.

Accendi il forno a 180°C in modalità statica. Rivesti una placca con carta forno.
