Sciogli il burro di mandorle con l'eritritolo in un pentolino a fuoco basso, mescolando fino a ottenere un composto omogeneo; aggiungi l'acqua tiepida e lascia intiepidire.

In una ciotola, mescola le farine di mandorle e d'avena, le proteine in polvere, i semi di sesamo, il lievito e le spezie.

Versa il composto di burro di mandorle negli ingredienti secchi e amalgama bene fino a ottenere un impasto liscio; lascia riposare per 10 minuti.

Formate un cordone di circa 10cm di lunghezza e 1cm di diametro, poi arrotolatelo a cerchio per formare una corona.

Spennellate la superficie con un mix di acqua e qualche goccia di essenza di fiori d'arancio.

Cuocete in forno preriscaldato a 170°C per circa 15 minuti fino a doratura.
