In una ciotola, unisci la farina integrale, le proteine in polvere, il lievito, la cannella, lo zenzero e il sale, mescolando bene.

Aggiungi lo sciroppo d'acero, l'olio di cocco fuso e lo yogurt greco e impasta fino a ottenere un composto omogeneo.

Forma una palla con l'impasto, avvolgila nella pellicola e riponila in frigorifero per 30 minuti.

Stendi l'impasto tra due fogli di carta forno fino a uno spessore di circa 5 mm e ritaglia i biscotti con le forme desiderate.

Cuoci in forno statico preriscaldato a 170°C per 10-12 minuti fino a leggera doratura.
