In una ciotola, mescola la farina di cocco e l'eritritolo fino ad ottenere un composto omogeneo.

Aggiungi lo yogurt greco, il tuorlo d'uovo e il sale, mescolando bene fino a formare un impasto compatto.

Avvolgi l'impasto nella pellicola trasparente e lascialo riposare in frigorifero per 15 minuti.

Stendi l'impasto tra due fogli di carta forno fino a raggiungere uno spessore di circa 5 mm e ritaglia il biscotto nella forma desiderata.

Cuoci in forno preriscaldato a 175°C per circa 12 minuti, finché non risulterà leggermente dorato.

Lascia raffreddare il biscotto su una gratella.

Sciogli il cioccolato fondente a bagnomaria e mescolalo con un cucchiaio di yogurt greco; immergi il biscotto e cospargi con cocco disidratato. Lascia raffreddare a temperatura ambiente.
