Immergere il pane raffermo nel latte scremato e lasciare riposare 10 minuti finché non assorbe completamente il liquido.

Cuocere il riso integrale in acqua salata per 25 minuti, scolare bene e far raffreddare.

Preriscaldare il forno a 180°C e rivestire una teglia rettangolare (28x20 cm) con carta forno.

Tritare finemente i fichi secchi e le noci insieme.

In una ciotola, amalgamare il burro leggero con l'eritritolo fino a ottenere una consistenza cremosa.

Aggiungere le uova una alla volta, mescolando bene.

Incorporare il pane ammollato con il latte residuo, il trito di fichi e noci, la mela grattugiata, la scorza d'arancia, l'uvetta e il rum (se usato).
